What Is Modified Starch?

Starch is a polysaccharide material. There are usually two types of unmodified starch structures: amylose and amylopectin, which are polymeric polysaccharides. Usually because of poor water solubility, Modified Starch is often used, that is, water-soluble starch. Soluble starch is a kind of modified starch derivatives obtained by different methods. It is insoluble in cold water, ethanol and ether, and it is dissolved or dispersed in boiling water to form colloidal solution or milky liquid.
